This cheesy potato chicken recipe becomes an instant family favorite. It was accidental when I came across this recipe. It was a lazy weekend afternoon. I was catching up with the novel I was reading while lounging in the living room with my family. My husband was watching a movie on HBO while my twins were playing beside him. My husband suddenly blurted out a question that really came out of nowhere. “Can we have potato and chicken for dinner?” I wasn’t sure if he was talking about two different dishes or one casserole dish, so I asked him a question in return. He simply grinned and told me, “Surprise me.” It was a challenge I couldn’t back out from.
