This Irish cream mini cheesecake is the best thing that every happened to one of my weekends. It tastes as if it came out straight from a fairy tale and I thought that it happens only in books! I was able to eat this cheesecake at a catered gathering at my friend’s house. It was a wedding anniversary celebration so it was quite a big event. There was no particular theme, it’s just a black tie event wherein you have to wear formal dress and suits. However, the table for the food has its own theme, or at least that’s what I think because it has all kinds of food you can ever think of. It was a long table, probably a series of tables joined together, and was divided into sections. It was buffet style though so anyone can come back and get anything from it.
My mind was totally at the dessert table, which was a bit hilarious to my husband. It has all kinds of cakes and pastries and pies that you could imagine! I tasted a little bit of everything because for me that’s the technique when you’re eating buffet style. You have to be able to taste everything so just taste a little bit of everything! There was probably one dessert there that captured my attention and it’s called Irish cream cheesecake. I was speechless the first time I took a bite of the decadent dessert, and it’s something that I couldn’t forget ever since. So I searched the internet for a recipe that would relive the taste I couldn’t forget and this is what I found! I hope you will love this recipe as much as I do!
