It’s gonna be love at first bite with this pumpkin roll cake recipe. That’s how I felt when I first tasted this! I love pumpkins. Even my husband and my twins love it, which is why we often have a pumpkin dish on the table. And it’s not just desserts! If I make a pumpkin stew, they will eat it too. And there’s the pumpkin soup, which is everyone’s favorite! Pumpkin has that texture of potatoes except that it’s softer and smoother. I think it has that perfect melt-in-the-mouth quality that’s just perfect for desserts. Eating a pumpkin feels like eating a cheesecake.
I learned about this pumpkin cake roll recipe from a friend who is in love with pumpkin like us. When I got her email, I immediately decided to make this the dessert for our weekend. My twins love it so much! And since it’s pumpkin, I allowed them to have another slice each. I don’t deprive them of sweets, but I control it. I can’t control my husband though. He’s a full grown adult who knows what he’s doing. He almost finished the cake. And I doubt that he would have if he didn’t realize just in time that he had eaten a lot. Quick Tip: Spread the cake in the pan all the way to the corners with a spatula. Smooth it evenly throughout the pan. If you dump it all in the center of the pan, it will not spread out to the corners in the oven by itself.
