This chocolate coconut pudding cake will definitely make your ordinary night extra special. There are nights that just seem so ordinarily boring that you can’t help but think that not all days are created equal. There are really those uncomfortable quite nights that you don’t know what to do with. My nights are rarely quiet because of my sons. They just brighten up my days and my nights without fail. However, there are nights that they sleep really early that I find myself alone until my husband comes home from work. And after working the whole day, I need my sanity back by talking to people. But if my husband works overtime, I can’t help but be alone.

During these nights, I make sure I go to the kitchen and entertain myself by creating something I haven’t made before or at least making something that I wanted to make again after a very long time. Just that last time that I had this type of night, I made chocolate coconut pudding cake. The addition of coconut just makes the pudding cake more flavorful. It gives that hint of freshness in the otherwise overly rich dessert recipe. I just paired it off with blazing hot cup of black coffee and my night already felt better. When my husband arrived, I joined him in the kitchen and watched him devour an entire ramekin of this chocolate coconut pudding!
