I always find myself craving for something Tex-Mex most especially for burritos. My husband told me one time how grateful he was that our kids didn’t look like burritos with the way I crave for them most of the time, pre-pregnancy, during pregnancy, and even post pregnancy. I knew he was just kidding of course, but it didn’t stop me from thinking how Chiyo and Calvin would have looked as burritos. Definitely adorable still, I presume. Anyway, even before I met my husband, I already love Tex-Mex. You could always find me at a Taco Bell with my friends or my cousins, waiting for tables to be vacant while two of us ordered for everyone.
Because of my love for these food, my friends always send me recipes that recreate my favorite Tex Mex food. One of those is burrito so I have an onslaught of burrito recipes compiled in my table. I printed them all, waiting for just the right time to finally make them. There are a few of those that I always make. One of them is the breakfast burrito. This breakfast burrito tastes so good that it always starts my day right. My husband loves it too even though he will not admit it. The look on his face at every bite is enough to tell me how much he loves it!
