This cheesy chicken broccoli rice casserole is perfect for large gatherings. I usually have a few of my relatives visiting us just to check on the twins and just to tour around town. I usually serve them casserole for breakfast or for lunch because it’s convenient and tasty to serve to a large crowd. I served this dish to them for lunch and they wanted it again for dinner! They can’t get enough of this dish!

“Cheese, chicken, broccoli and rice were meant to be together. And, I added pasta just to cover all my bases. If you have one kid that likes rice and one that likes pasta . . . here you go kids, eat up!”
It’s really a winner recipe because even the kids will surely love this recipe. It’s like a creamy pasta dish and kids love pasta! They will not even care that there are broccoli florets in this.
Ingredients
1 pound Tyson Chicken Breast Tenders – cut into bite sized pieces
Drizzle of Great Value Frying Oil
Salt/Pepper
2 Tablespoons Horizon Organic Unsalted Butter
1/2 Cup Barilla Uncooked Spaghetti Noodles – broken into pieces
1/2 Cup Jasmine Rice
2 Cups College Inn Low Sodium Chicken Stock
1 teaspoon McCormick Garlic Powder
8 ounces Green Giant Frozen Broccoli Florets – thawed
6 ounces Horizon Organic Cheddar Cheese Shreds
Instructions
Over medium/high heat in large pan; cook chicken with frying oil, salt and pepper until browned and cooked through. Remove from pan and set aside.
Reduce heat to medium and allow pan to cool for 1 minute.
Melt butter in pan and stir in pasta. Continue to stir and fry pasta in butter until golden brown. Add rice and toast for 20-30 seconds.
Add stock and garlic powder. Bring to a boil, reduce heat to medium/low, cover and cook for 8 minutes (stir occasionally).
Add broccoli florets, cover and cook 2 more minutes. (check that the rice is done)
Add cooked chicken and cheese.
Remove from heat and serve.

Quick Tip: Sprinkle some more extra cheese on top if you prefer a really cheesy serving.
