My family adores sweet potatoes. I think my kids love it so much because I used to feed them a sweet potato puree when they were little and they loved the lightly sweet flavor and creamy texture of it. It just seemed like all they wanted was sweet potato since when I introduced new flavors or new veggies they cried, but every time I came back to sweet potato, they absolutely loved it.
Well, I decided the other day to search for new sweet potato recipes. Knowing that my teenage boys love it as well as my husband means it will be a sure-fire hit. Sweet potatoes were on sale today so I stocked up and am on the lookout for new recipes (share any if you find them please!). Well, I found this recipe and decided to give it a try as something I could eat for a snack in the afternoon, and if it was good enough, I would make it again for them. Well, I gave it a try and it was positively amazing. I loved it and devoured the whole thing on my own (yeah, I skipped dinner after this). I had to make a whole new batch for my boys and that one was gone in no time as well!
