I am such a huge fan of stuffed peppers. I know, they are typically a “healthy” meal and that is why people eat them, but that is not why I enjoy them. I like them because the peppers really have a sweet taste that I love. Especially when they have been grilled or baked so they are now soft and a bit chewy. My favorites are the yellow peppers, but I really could enjoy any of them which is why I always mix all the colors to create a beautiful plate.
Well, like I said, I do not eat the stuffed peppers for the health of them, so I like to switch it up. The other day I was making my favorite pasta casserole when my kiddo passed by and asked if I could add some peppers to that (he loves peppers as much as I do!). I thought it was a bit peculiar, but I added it to a corner of the casserole dish and we both tried it when it was ready. It was so good, we chopped up even more and added it all in there for everyone to enjoy! This was such a huge hit, I had to make another one the following night!
