I Am Now The Cake Master After Baking This Lemony Goodness!

I was never much of a lemon person growing up.  I would stay away from it because to me, lemon meant not dessert. I mean, lemon is a fruit, so you cannot serve it to me for dessert and expect me to love it.  Dessert is chocolate or vanilla things, not lemon.  Well, I got my dose of reality when I fell in love with a lemon meringue pie.  I did not know lemon could taste so sweet, refreshing and well, like a dessert.  I was mind blown for a minute… and then realized I have been missing out for so long.

 

Well if you are anything like me, you probably have missed out on some great lemon treats over the years.  I mean, it is not just every day you break out the Kitchen aid mixer and whip up a big lemon pound cake.  No, those are for special occasions, so you have to save your recipes.  Well, I saved for a very long time, but when I came across this one, I knew I had to make it.  Heavenly, light and full of that sweet crunchy coconut texture, you cannot go wrong with this one!  Everyone in my family loved it!
