I love a good breakfast casserole. Since I was little, I remember looking forward to those busy mornings my mom had that gave us a great big casserole dish for breakfast. It was something that I am sure meant a stressful day for her, but for us, it was pure fun. I learned to enjoy these so much, it is always what I turn to when I need a good comfort meal or something just cheesy and full of potatoes and totally delicious.
The other day, I was home with my husband and boys and we were watching a movie. It was about 4pm when I realized I had not prepped anything for dinner and these men would be quite hungry very soon. I put my thinking cap on and came up with the idea of having breakfast for dinner. First though, I had to pitch it to them and make sure they would be okay with it. Well, they were pretty intrigued by the idea so I went with it. I gathered tater tots, eggs, cheese and ham and got to making the best breakfast for dinner casserole I have ever made! The best part? I had dinner on the table for my guys in under an hour when I did not even have anything prepped in the first place!
