This easy beef casserole reminds me of a childhood memory. Mom always made casseroles whenever we had guests. She said it’s the most practical dish to serve for large crowds and at the same time, it’s sill fancy enough and delicious enough to be appreciated by the visitors. One favorite casserole that mom loved to make was beef casserole. I always helped her make it in the kitchen while my brother always helped set the table with my dad. Mom’s beef casserole was creamy and cheesy and oh, so flavorful that I haven’t tasted anything that’s better than hers.
I tried making it, of course. And all I can say is while I am not able to achieve the full taste and consistency of her casserole, mine tastes good too. Just ask my husband who is a fan of the casserole. I always see him get second servings. It just feels good whenever your family appreciates your cooking, doesn’t it? Because they are the reason why you are doing your best. You want them to eat only the best things that are good for them. And this beef recipe is something good for them. And it tastes best too!
