I have a friend named Apple; and she is crazy over this homemade apple cake and honey glaze recipe that she got from her mother! Let me tell you about Apple. I am not sure if you will believe me, but Apple and her sisters are all named after fruits. I will not disclose the names of the other two in case you will not really believe me, but there is a story behind it. I knew their mother since I was a kid. Their mother was my mother’s friends so I was often in their house. While my mother and her mother were talking, Apple and I would usually play with her play house. My brother wouldn’t come because during that time, he was at that age where he thought “girls have cooties”, and I used to tease him he liked Apple. He did! But of course he never admitted it.
Apple’s mother would always bake us something for snacks. That’s how it usually was. Most of the time it was pie. And I remember Apple gushing with delight every time it’s apple pie. We all have that quirk wherein we have a bias over something related to our names. One thing I couldn’t forget was her mother’s apple cake with glaze. I wasn’t sure what the glaze was actually. I didn’t have a habit of asking my friend’s mother about what’s on it. I knew about the apples though because of Apple herself. She couldn’t stop sighing with delight! But yes, the cake was really delicious. The glaze complimented the moist cake. We used to eat it with milk while our mothers drank tea with it. This recipe that I am about to share with you reminds me of Apple’s mother’s cake. And if Apple is here, she will probably gush about this too!

Quick Tip: For a quick step: Use Crunch Pak apples that are already sliced. Dice them up with the skin on and toss them in the batter.
