The first time I learned about this cheesy buffalo chicken pasta recipe, I know my family will instantly love this! Chicken is the family’s most favorite meat. We have chicken at least three times a week because I know everyone will never say no to a chicken dish. Pasta is also a favorite in the family. Whenever the meal involves pasta, I always expect clean plates by the end of the meal, and three loud burps coming from my three boys (including the biggest boy called my husband). And then there’s cheese. I think I have mentioned this a lot of times before. Cheese makes everything taste better. We put cheese in everything! We always have cheese in the pantry.
I first tasted this cheesy buffalo chicken pasta at Jean’s house. His wife cooked for us, his friends, while we caught up with each other’s lives and while we’re looking after their 2-year-old daughter Kylie. Kylie was super cute! Her bouncy short blonde curls were just too adorable on her, making her look like a baby Barbie. She reminds me of one of my nieces who was of the same age. So anyway, along with crusty bread and fresh Caesar salad, his wife served us this really creamy pasta. What I just knew back then was that it was a chicken pasta and that the flavors in the pasta just blend so well together! Her pasta casserole dish was empty within minutes. And the guilty faces surrounding it were mine and my friends’ faces.

Quick Tip: Ideal to make this in a 5 quart crock. It wasn’t full but it will give you plenty of room to stir.
