Mrs. Scott’s Creamy Ham And Cheddar Soup

Mrs. Scott was my old History professor who was one of my favorites. The way she taught history was amazing! I love history, but she made me even love it more because when she started narrating the tale of the old, we were always transported to those times as if we were there. Mrs. Scott was stern inside the classroom and a little bit strict. She also seemed to have eyes behind her back because she always called on students who were doing something behind her back. I was one of those that she caught popping a gum iner her mouth even though I was hiding behind one tall buffoon. She didn’t like eating in class.

One weekend, I bumped into her while doing my groceries. I knew she lived in my neighborhood, but I didn’t know where so I didn’t even try to find out. She invited me for lunch and I discovered she just lived a few houses away from my best friend’s house! Anyway, she served me some delicious ham and cheddar soup, which she said was her son’s favorite (her son now lives with his family in New Jersey) so she always cooked it. It tasted really good and very cheesy. We talked about good times while I was devouring my soup. I was already back home when I remembered I forgot to ask her about the recipe. I found this version that tasted just as good, but less rich! You will love this one.
