I often spoke about my brother’s hatred for vegetables. Well, maybe not really hatred, but he truly didn’t like them most especially when we’re just kids. He would set aside the carrots, the string beans, the cabbage, and the peas from every stew and just ate the potatoes and the meat. Potato was the only vegetables he ever ate. But whenever he’s sick, Mom always took the opportunity to feed him something nutricious. She often made vegetable soup and feed my brother with a huge hot bowl of the most delicious soup.
At first, my brother would always hesitate to eat. He’s not blind. He could see the vegetables floating around the bowl of soup. He wouldn’t eat even when Mom started to get angry. He would only eat whenever Mom would say that it’s a magic soup that would make my brother feel better and healthier just like Popeye. He might not be Popeye’s fan, but he could still get the philosophy behind. My brother always finished his vegetable soup and he would instantly feel better after (or so he always said, Mom still kept him on the bed for a couple of days). But she was able to make him finish his vegetables. Mom’s magical soup was indeed magical!

Quick Tip: This can also be made into a slow cooker soup recipe. Simply saute the vegetables separately, add the ingredients to your slow cooker, and good on high for 2 to 3 hours.
