I think most of us experienced living in dorms when we were in college. I experienced it for half of my college years, but I was able to rent an apartment with six of my closest friends during my last final years in college. We did part-time jobs so we could cover the expenses of living in an apartment. It also helped that we have a rich friend who offered to shoulder the expenses first and we’d just pay her after we received our salaries. But despite living in a much bigger apartment that has its own kitchen and at least two bathrooms, we’re still college students who lived like college students.
Our cupboards were full of instant ramen and microwavable meals. We had boxes of pop tarts and cereals because those were what we ate without feeling the need to cook. And we only had one pot where we sometimes cooked macaroni and cheese or other concoctions that we could make. We once cooked instant noodles in the pot and put pieces of leftover fastfood chicken just to make chicken noodle soup for our sick friend. In other words, we lived in a one-pot type of world and any one-pot dish was a blessing to our college way of life. This one-pot chicken cacciatore recipe instantly reminds me of those days when we were struggling as college students. This one you’ll definitely enjoy more than our one-pot pasta!
