Aunt Monica is one of my favorite aunts because both of us are in love with cheese and pesto. In fact, during reunions, she always makes sure there is a pesto dish that we will both enjoy. Aunt Monica is one of my aunts who chose to be alone for the rest of her life, which is why she spoils all of us, her nieces and nephew, and her grandchildren. I have to say I am one of Aunt Monica’s favorites so whenever I request for something, she will always make it for me.
I always request for Aunt Monica’s cheesy pesto bread. Oh my goodness, she bakes the most delicious pesto bread! When you pull the bread apart, you can see strings of cheese clinging to each other until you are able to pull them too much apart so they can finally separate. The cheese melts in the mouth and the pesto taste is just to obvious. It’s a recipe for people who are in love with garlic, basil, and cheese. Just make sure you serve the bread warm for the stringy cheese. Because they do turn a bit more solid when the bread cools. You can find the recipe for this heavenly bread on the next page. Quick Tip: Cheese was awesome when it first came out of the oven, but much less awesome after it cooled down and lost its melted goodness. If you want to make this cheesy version, serve it to a crowd who will eat it fairly quickly while it’s warm.
