I consider Gumbo a luxury food. It’s not something that I get to prepare every day given the time and effort needed to make it. However, whenever I find myself having that little bit of extra time, it always comes to mind. My mother makes the best gumbo. Hers, though, was seafood gumbo. Mom loves shrimps and squids, and they are always a part of her gumbo. She adds sausages too, and that makes the gumbo more flavorful. My brother actually loves her gumbo, the picky eater that he is. I even heard him asking mom for the recipe so that his wife Jenny can cook it at home.
My husband loves gumbo too. But whenever I make it, I make sure I have something for the kids. They may love sausages and shrimps, but they don’t favor the strong flavor of gumbo unlike us adults. This gumbo recipe makes use of chicken and sausages instead of seafood. But even then, the flavors are amazing. We usually serve this over rice because it just tastes so good with piping hot white rice or bread. And it’s also one of the dishes you can enjoy without anything to go with it. It will surely spice up your ordinary night in a different way! Enjoy this recipe!

Quick Tip: You can make your own Cajun seasoning with 1 T. Cayenne Pepper; 1 T. Garlic Power; 1 T. White Pepper, 1 T. Black Pepper, 2 t. oregano, 2 t. thyme, salt to taste.
