I always talk about Mom’s recipes that she inherited from my grandmother, but my Dad is also one very good cook. It’s just that he rarely cooked because the kitchen was Mom’s territory and she hated it when it got too messy. Dad was a bit of a messy cook, actually. And both of them didn’t want to deal with each other after such an incident. However, whenever Dad was able to use the kitchen, he always cooked fish. That’s his specialty. One favorite of mine was whenever he cooked tilapia.
One tilapia recipe was some kind of stew. He cooked the tilapia in a broth along with a few greens, potatoes, and carrots. Another one was tilapia cooked in coconut sauce and vinegar. The vinegar wasn’t too strong so I still loved the dish. In fact, it was one of my favorites. But my most favorite of all was probably the simplest one. Tilapia with a simple white sauce that tasted creamy and tasty at the same time. Since fish doesn’t have as much flavor as chicken, beef, or pork, the sauce was just right.
