Every single time we had leftover bananas in my house, or over ripened bananas, my grandma would put them away in a piece of foil in the fridge. She would leave them there until they were all shriveled up and you could feel they were gooey inside. From there, my grandma would pour those in a bowl with flour, sugar and other ingredients and create the batter for a banana loaf. She would bake that up and we would end up with a delightful loaf of banana bread that was gone in an instant. It was just so yummy.
That is all I thought you could do with overly ripe bananas, until I married my husband that is. One day we had gone over my in law’s house and my mother in law was making cookies. I was thrilled because I LOVE cookies. I knew whatever flavor they were, I would like them, but I still wanted to ask. When she responded, she told me they were banana cookies. I was pretty impressed. I had never tried a banana cookie in my life. When I asked how she made them, she said that is what she makes with ripe bananas. I was mind blown. I did not know about that option!
