The other day I was making a big ‘ol pot of chili. It’s winter, it’s Pennsylvania, it’s cold. What better meal to make other than chili in conditions such as these?
My little one watched as I dumped in a few jars of canned stewed tomatoes into the pot. He asked me if I could leave the tomatoes out of his bowl because he didn’t like them. I asked him why he didn’t like the tomatoes and he said that their “feeling” was mushy and slimy.
I assumed he was elaborating on the stewed tomatoes texture. Even though I don’t mind stewed tomatoes I could remember not liking them as a child and for the exact reason my child had just explained to me. So, I strained the slimy tomatoes out of his bowl.
Moving on a few weeks ahead, I made stewed tomato casserole as a side dish to our fish dinner. My boy, surprisingly, gobbled down this casserole like nobodies business. I was stunned!

Quick Tip: The best thing about the leftovers is you can top it all over again with cheese and toast pieces and it tastes just like the first time!
