30-Minute Mongolian Beef – Better Than P.F. Chang’s!

Sooo Good!!

My husband and I love quick and easy meals. Whether it’s his turn to cook or mine, we always try to spend as little time in the kitchen as possible. I would much rather spend my hard-earned free time having a great conversation, watching a brilliant movie or just sitting by the fire with a glass of my favorite wine! There are plenty of quick and easy recipes available – however, many of them seem to be for larger crowds or at least families of 4 or five. Which means, being just the two of us, we would always have leftovers unless we try to scale the recipe down ourselves.

Now, there’s absolutely nothing wrong with leftovers! In fact, they are often lifesavers when we’re too busy to cook anything. But sometimes you just don’t feel like having the same meal two or three days in a row, you know? That’s one of the reasons this recipe worked so great for us. Plus, it was absolutely delicious!
