Oh, The Irony! But This Freezer Chicken Fried Rice Can Warm Any Cold Busy Day!

When I was a kid, I was usually the one whose task was to cook rice. I volunteered, actually, because it’s a choice between that or washing the dishes and I HATED washing the dishes. Whenever I wanted fried rice for breakfast, I usually sneaked in another cup of rice and made sure I didn’t use too much water. The leftover rice made the best fried rice. I had requests for ingredients too. I wanted bacon bits and egg bits on my fried rice all the time. Well, you can put anything you want on it!

 

Now that I’m living alone and cooking my own food, I have my own version. I sauté a few cloves of garlic and take them out after their flavors infused the oil. Then I add the bacon, eggs, and then the rice. When the rice is almost cooked, I put lots of cheese in there, cutting down on the soy sauce. I also use a bit of the Japanese seasoning called umami because it makes the rice tastier.
