I’m a big fan of environmentally conscious living, which means I always like to find use for leftovers. I hate throwing food away – not only because it’s bad for the environment, but also because it makes me feel I’m throwing money in the trash. Which basically is exactly what it is – and I know I can’t afford to do that!

The other day I made mashed potatoes to go with chicken, and I decided to make a huge batch just so I could use the rest for another dish later.

So, yesterday I made this one. It was the easiest dish ever! It reminded me of something my Grandma used to make when I was little. She always made the most incredible meals from very little ingredients, and somehow they turned out so delicious you just wanted to eat it all at once.
