I am really loving these homemade apple fritters! They taste amazing and they aren’t all that hard to make. Now, I’m not saying I’m a better cook than grandma but by the taste of this apple fritter that I’m eating right now as I type this, It’s a close race.

Apple fritters are a fall time favorite. Fresh ginger and cinnamon give them a spiced flavor that complements the sweetness of the apples. Ingredients
1 pound apples, cored
1/2 cup Gold Medal flour
3 Eggland’s Best eggs
1/2 teaspoon McCormick cinnamon
1/2 teaspoon fresh grated ginger
1 teaspoon lime zest
1 teaspoon lime juice
2 tablespoons sugar
1/4 cup coconut oil
Instructions
In food processor blitz apples with lime juice until finely chopped.
Transfer to bowl and add all the rest of ingredients except coconut oil. Mix well.
Preheat skillet with 1 tablespoon of coconut oil to medium high heat.
Fry even sized fritters for 2 minutes per side or until golden brown. (When you fry in batches add oil in between the batches. )
Serve piping hot with whipping cream, ice cream or natural maple syrup.
