For years, coconut cream cake has been one of my ultimate favorite cakes to both bake and eat. It’s just so light and fluffy! We had this cake at my sister’s bridal shower and it was decorated with pink and peach-colored flowers. It looked absolutely gorgeous. I gotta say, it was touch slicing into this cake because it was almost too pretty to eat…almost. I don’t get to indulge in coconut cream cake all that often because my youngest son has a tree nut allergy and yep, that includes coconuts. So, I’ll typically only make shortcut coconut cream cake on special occasions. Did I mention that this cake is way simpler to make than other coconut cakes?
