Who here loves a thick, juicy sauerkraut sandwich? I know that I certainly do! In fact, when I was pregnant with my first child I ate so many Reuben sandwiches that I gained 8 pounds in one week. My doctor was not happy and told me to lay off the salty foods.
I reluctantly gave up my beloved Reuben sandwiches. Years later, and all of that baby weight shed, I am still enjoying Reuben sandwiches in moderation. I recently came across a recipe for a Reuben casserole and my heart skipped a few beats.
