I am a sucker for Mexican foods, especially things like tacos and enchiladas. I love all of the spicy flavors that go with these yummy entrees such as cumin, cayenne pepper, and taco seasonings. I remember the day I discovered that these yummy things could be turned into casseroles.
A Mexican casserole? Really?! That sounds amazing! I love nachos as much as I love all the other Mexican dishes that I mentioned so when I saw that there was a recipe out there for nacho casserole I about flipped my lid, which is ironic because this casserole is actually dubbed “Crazy Nacho casserole.”
The name is befitting because this casserole truly is insane. You may be wondering why it is insane and I’ll tell you! This casserole is a pile of nachos smothered in all of your favorite Mexican flavors and spices.
It gets baked up in an oblivion of yummy goodness and comes out bubbly to perfection. You really can’t pass this casserole up nor can you just have one serving. I love smothered my share with sour cream, salsa, and shredded cheese.
Talk about a heavy hit of yummy tastiness for your belly. If you’ve never made crazy nacho casserole before, now is the time to start 🙂
