I love having a large family. There is always something going on and someone to tend too. Some might think that this lifestyle could get rather cumbersome but I don’t feel that way at all.
In fact, I feel rather blessed. I grew up in a big family. I am the oldest daughter of 5 kids. One thing I took note of when growing up was my mom’s ability to make healthy, nutritious meals that always fed everyone.
We never went without and there was always leftovers. Now, my parents weren’t rich by any means but we always had what we needed. I asked my mom how she managed to keep us all fed on nutritious foods when there was sometimes very little to work with and she said it was all about the ingredients.
My mother was right. It is possible to whip up a large and in charge casserole dish using simple, savory ingredients that don’t cost an arm and a leg. Like this cabbage casserole for instance.
It’s dubbed “poor man’s casserole” because it’s super cheap to make. Plus, this casserole makes quite a bit of food and there are always leftovers for the next day 🙂
