Lately, we’ve gotten into the habit of having Mexican Monday. On this day, I prepare some sort of Mexican meal for my family. my husband and kids made this request as they are crazy for Mexican cusine. This coming Monday will mark Mexican meal day number 4 and I already feel like I’ve worked through the most popular Mexican dishes. we’ve had tacos, enchiladas, and even burrito casserole. However, I came across this amazing recipe for Crock Pot pork chile Verde and totally knew I had to make it.
If you like green chiles and green salsa you are going to be head over heels for this yummy recipe. I think we shall eat it over rice. It is suggested to eat it in burritos but we just had those the other day so over rice it is. I also think this pork chile Verde would take great in taco salad instead of using seasoned beef. You could pile the salad high with the pork and all of your favorite taco fixings like cheese, lettuce, tomatoes, black olives, onions, and all the condiments. I’m getting really excited about this easy south of the border slow cooker meal and you should, too 🙂
