If you like Coffee Crisp bars and *love* coffee cake, this decadent combination is for you! You even get a little nutrition (and nutty flavor) in the mix thanks to whole wheat flour, psyllium husks and flaxseed. Whenever I think of coffee cake I always envision the dry Bundt cake that my mom used to make. Don’t get me wrong, coffee cakes are supposed to be dry and her cake was always good. However, traditional coffee cake just ain’t my thang, yo. Ther eisn’t anything dry about this cake, though. The inside is tender and moist while the outside is crisp and delicious. I love the crunch followed by the soft, pillow of cake. Yum!
I was super excited to have come across this coffee cake that literally contains coffee and is crispy! It’s super sweet, buttery, and rich. I like that a lot! Plus, you’ll find that this dessert is very easy to make. Score! I think this coffee cake will make a lovely treat at the monthly ladies breakfast.
