So, the other day my sister and I were chatting over freshly made jam and biscuits. We love to bake around here and we also love to can our own fruit preserves. As we were chatting my little sister told me that she has found it increasingly difficult to get a good meal on the table due to working full time as a registered nurse and having two toddlers at home.
Her husband, my brother in law, is a farmer so he, of course, needs a hot meal to come home to. I was telling my sister that she should consider freezer cooking. My sis looked at me like I had lost my mind.
I told her that you don’t actually use the freezer to cook haha! Freezer cooking consists of making up a whole mess of meals, packaging them up, and freezing them to be made at later dates. I told her that when she gets home late and doesn’t have to prepare a meal from scratch she can just pull out one of her freezer meals, warm it in the oven, and there you have it, dinner!
I then passed along to her this amazing freezer meal recipe for hillbilly chicken spaghetti. It’s very easy to make and tastes wonderful when baked in the oven after being frozen. I made this the other night, a double batch, actually. I fed my family one half and froze the other half for later 🙂
