I don’t know about you ladies and gentlemen but I love broccoli floret and cheese casserole. It’s one of my favorite things to whip up on a busy afternoon because it is so easy to prepare. However, I am one to enjoy variation from time to time so when I came across this Ritz cracker version of the beloved casserole I got giddy inside.
And here’s another insider secret about this casserole: it contains Velveeta cheese. I know, I know, some of you raise your fists at Velveeta cheese because it’s a cheese product and not actually cheese, but who the heck cares? This broccoli and cheese with crackers casserole is ding dang good and you should live a little 🙂

Quick Tip: If you don’t have any Ritz on hand any type of crackers will do just fine.
