I’ve posted many recipes for macaroni and cheese over the last year. Why? Because mac and cheese is really good. There are numerous ways to prepare this classic dish and each one is unique and special. I don’t think I’ve ever eaten a macaroni and cheese dish that I didn’t like.
This particular recipe is called “Fancy Macaroni” and I chalk this moniker up to the fact that there are a few “upscale” cheeses thrown into the mix. Don’t worry, it’s nothing you can’t handle.

Quick Tip: I like to add an extra dusting of parmesan cheese to the top of this casserole as it bakes.
