Ingredients
1 whole Turkey Carcass
2 teaspoons McCormick Garlic Powder
2 Tablespoons Dried Oregano
1 teaspoon Morton Sea Salt
1 teaspoon Black Pepper
1 whole Sweet Onion, Peeled And Chopped
½ cups Carrots, Chopped
½ cups Celery, Chopped
1 whole Golden Potatoes, Chopped
3 whole Small Eggplant, Peeled And Chopped
1-½ cup Uncle Ben’s Long Grain Rice
Instructions
In a large stock pot, cover turkey carcass with water and add garlic powder, oregano, salt and pepper. Bring to a boil on medium-high heat. Lower heat to medium-low and let simmer for about 1 hour.
Remove turkey carcass and discard. Add chopped vegetables to stock. Simmer, stirring occasionally, until vegetables are very tender, about 30–40 minutes. Add rice to broth and let simmer another 20–25 minutes or until rice is tender.
