My little one came to me yesterday and said, “Mama, can you make a casserole that has cheese and bacon in it?” After I recovered from the fact that my 5-year-old used the word “casserole” I told him that I would indeed make a meal just as he described. My guy said, “Yay! We are having cheese and bacon for dinner!”
I laughed and told him that the casserole would need a little bit more substance than just cheese and bacon. My son said, “No taters, though!” No taters?
What kind of casserole can you make that includes cheese and bacon without “taters?” Apparently, one containing cauliflower. Guys, this casserole is uh-mazing! You can’t even tell that it’s cauliflower and not potatoes. Plus, you aren’t getting overloaded by carbs. It’s a win-win meal 🙂

Quick Tip: Make this meal even healthier by swapping out pork bacon for turkey.
