I was having coffee with my neighbor Sally the other afternoon and I realized that I didn’t have anything planned for dinner yet. With just 2 hours to get something going, I was sort of in a panic. You see, if I don’t have supper ready when my kids get off the bus they’ll eat everything in sight and not be hungry when dinner is on the table.
Sally told me she had the perfect recipe for me. She pulled out her gigantic cookbook and showed me this lovely twice baked potato casserole. It looked delicious and totally kid-friendly!
I was also happy to see that it cooked in less than 1.5 hours. Score! So, I went home and whipped up this awesome tater casserole, served it to my family, and they loved it. You know what? I have a funny feeling that yours will, too!
