I love rhubarb. Do you love rhubarb? I know it’s kind of an acquired taste but once you have it nestled in these cookies you won’t ever look back.
I cannot begin to tell you how sweet and soft these little guys are. They are yummy! My kids devoured these cookies up like nobodies business and my husband did too. Plus, they are very easy to make!
My neighbor Sally was the one who directed me to this recipe and now I am more than happy to share it with you all. I made these cookies for a bridal shower I went to a few weeks ago and the pretty pink bits of rhubarb added a nice touch to the dainty dessert table. I think you will really enjoy making and eating these cookies 🙂
