Miss Mississippi’s Most Famous Muddy Brownie Recipe

I love eating these Mississippi mud brownies fresh out of the oven in a bowl with a spoon. Yum!

Check out what my pals over at Normal Cooking had to say about this recipe:

“Brownies are a staple of football parties everywhere. It’s a classic dessert that everyone loves! What makes these brownies unique are the Oreo crust and the marshmallows! I will admit that these are not the most beautiful brownies in the world — the marshmallows didn’t really melt like I thought they would. The insides melted but there’s these strange outer marshmallow husks just sitting there on top of the brownie. While it tasted AMAZING, like a lightly toasted marshmallow, I think it makes the brownies a little uglier. But hey, how pretty is something with the word “mud” in the title supposed to be anyway? In spite of the marshmallow husks, that ooey gooey molten chocolate definitely looks appealing. And the Oreo crust just made these brownies out-of-this-world delicious! I think I might start making all my brownies with an Oreo crust.”

Not only are these brownies a staple at my husband’s football parties but they are a beloved dessert for church potlucks, too!

Ingredients

30-40 crushed Oreos

1/4 cup melted Land O Lakes butter

1/2 cup Wesson vegetable oil (or 1/2 cup of applesauce to cut calories – it works just as well)

1 cup Domino white sugar

1 teaspoon McCormick vanilla extract

2 Eggland’s Best eggs

1/2 cup Gold Medal all-purpose flour

1/3 cup Toll House unsweetened cocoa powder

1/4 teaspoon Clabber Girl baking powder

1/4 teaspoon Morton salt

1/4 cup Jet-Puffed mini marshmallows

Instructions

Preheat oven to 350 degrees F. Grease a 9×9 inch baking pan.

Pull out 1/8 cup of crushed Oreos and set aside. Mix the rest of the Oreo Cookie crust with melted butter. Spread into the bottom of the pan and press firmly. Bake for 8-10 minutes.

In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs.

In a separate bowl, combine flour, cocoa, baking powder, and salt. Gradually stir into the egg mixture until well blended. Fold in the marshmallows.

Pour brownie mix on top of Oreo crust. Sprinkle the rest of the crushed Oreos on the top of the brownie mix in clumps.

Bake for 20 to 25 minutes, or until the brownie begins to pull away from edges of pan. Let cool on a wire rack before cutting into squares.
