Don’t be turned off by the whiskey in this recipe as there is only a few spoonfuls. Plus, the alcohol burns off during the cooking phase. Whiskey gives this dessert an awesome punch of flavor!

“There are a million incarnations of pumpkin cake across this beautiful land of ours, one of which is a flat, dense, dark replica of the one I used to love in my elementary school cafeteria. By contrast, the one I’m sharing with you today is lighter in color, thicker, and is made special by the addition of golden raisins that I soaked in…I’m sorry…whiskey. I’m sorry, okay? But I’m on a whiskey kick.”
It’s okay to be on a whiskey kick! They don’t call the stuff “Grandpa’s cough syrup” for nothing!
Ingredients
1 cup SunMaid Golden Raisins
1 cup Whiskey (optional)
2-1/2 cups Gold Medal Flour
1 teaspoon Morton Salt
1 teaspoon Clabber Girl Baking Powder
1/2 teaspoon Baking Soda
2 teaspoons McCormick Cinnamon
1/8 teaspoon Ground Nutmeg
1 stick Softened Land O Lakes Butter
1-1/2 cup Domino Sugar
3 whole Eggland’s Best Eggs
1-1/4 cup Knox Plain, Unflavored Yogurt
1 cup Libby’s Canned Or Fresh Pumpkin Puree

WHISKEY WHIPPED CREAM:
1 cup Borden Heavy Cream, Very Cold
2 Tablespoons (to 3 Tablespoons) Sugar
2 Tablespoons Whiskey
Instructions
Preheat over to 325 degrees.
Spray 9×13 inch pan with baking spray. Combine whiskey and raisins in a bowl and allow to soak for awhile.
Sift together flour, salt , baking powder, baking soda, cinnamon, and nutmeg. Set aside.
Add butter to a mixing bowl and beat. Add sugar and beat. Add in eggs one at a time, beating after each egg.
Add yogurt and pumpkin and mix gently until just combined. Add flour mixture in increments, beating until just combined. Drain raisins and stir in by hand.
Pour batter into pan and bake for 35-40 minutes, or until set. Remove from oven and allow to cool completely.
Whiskey Whipped Cream:
Combine ingredients and begin mixing immediately on high speed until stiff, about 4 minutes. Spoon over cooled cake.

Quick Tip: Add a few sprinkles of cinnamon and nutmeg to the top of the whipped cream for a pretty garnish.
