I was getting in some snuggle time with my youngest son the other day. He is ten years old and I know these snuggly moments are fleeting. I think he was letting me fuss over him partially because he didn’t feel so good.
School is back in swing now and of course, with it comes all kinds of germs and sick bugs. My little guy was telling me how he wanted a peanut butter and jelly snack but not a sandwich because he has those all of the time. I couldn’t think of anything to make him with those specifications.
Then it dawned on me, “Peanut Butter and Jelly Streusel Muffins.” I had just seen a recipe for these muffins via The Pioneer Woman’s website and thought that my kids would like them. So, off to the kitchen I went to get started on my little man’s request.
He followed me and told me all sorts of interesting stories about his sister’s behavior on the school bus. Let’s just say that her and I will be having a major talk about not sticking bubblegum under the bus seats. Kids!

Quick Tip: You may use store-bought English muffins to keep this recipe simple and easy to prepare but making your own from scratch is so much better.
