These scalloped potatoes are the embodiment of comfort food. When we eat good food, we come together. That is why I usually serve these with my holiday spreads. It gets everyone talking, laughing, and feeling cheery.

HOORAY! This was awesome, and by slicing my potatoes with the food processor, REALLY quick to make (seriously, it only took me like 1 minute to slice all my potatoes–and they were even thickness). The cheese sauce came together / quickly nicely as well. I used regular butter but 2% sharp cheddar, with good results. I split the casserole into two 8×8’s and put one in the freezer for another dinner. Will definitely make this again!
Ingredients
4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1⁄2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1cup grated sharp cheddar cheese
1⁄2 cup grated cheese, to sprinkle on top
paprika
Instructions
In a small sauce pan, melt butter and blend in flour.
Let sit for a minute.
Add all of cold milk, stirring with a whisk.
Season with salt and cayenne.
Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
Reduce heat and stir in cheese.
Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
Pour half of cheese sauce over potatoes.
Repeat with second layer of potatoes and cheese sauce.
Sprinkle the remaining cheese on top.
Top with some paprika for color.
Bake uncovered for about 1 hour at 350°F.

What if I have an aversion to cheese…can I leave it out? Seems like very little butter and a lot of milk???

I would think the Recipe Roost would know the difference between Scalloped potatoes ans Au Gratin potatoes. the difference is cheese.. Scalloped potatoes DO NOT contain cheese!!!!!

I tried to save this to my Pinterest for future use as I am thinking double or triple the recipe for either a church potluck dinner or even one at our seniors’ center!
