If you’re anything like me, you’re a major fan of carrot cake. I love the cream cheese frosting and the spicy flavor of the cake itself. So, you can imagine my delight when I stumbled upon this recipe for carrot cake cookie bars. It was seriously a magical moment for me. I instantly knew I had to make my own batch of these bars. I managed to double the batch so that I could share with a few friends and see how they liked them. Guess what? They LOVED them.
These bars are relatively easy to make and are the perfect fall-time treat. Of course, you can eat them any time of the year, but they make a great dessert for those autumn parties. Imagine passing around a platter of these bars at a family get-together and everyone asking, “Wow, who made these awesome things?” Nothing liek a little confidence boost to get you through your day.
