This recipe is a creamy soup that is filled with chunks of potatoes and lots of corn. It is seasoned perfectly with flavors that will make everyone so excited! The chicken stock gives it such a nice flavor as well. The onion also stands out to give it a nice kick, but you can swap that to onion powder if you’re out of onions!
The best part about this recipe is that it is made in a slow cooker. The time length varies, but I made mine in 3 hours on high. You can also set it on low and have it ready in 8-9 hours if you plan to leave it cooking while you’re at work. Either way, it will turn out just as delicious.

Ingredients
24 ounces red potato, diced
1 (16-ounce) package frozen corn
3 tablespoons all-purpose flour
6 cups chicken stock
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
1/4 cup heavy cream
Instructions
- Place potatoes and corn into a slow cooker. Stir in flour and gently toss to combine. Stir in chicken stock, thyme, oregano, garlic powder, onion powder, salt and pepper, to taste.
- Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.* Stir in butter and heavy cream.
- Serve immediately.
