I gotta tell ya folks, I do not always eat my vegetables. Yes, I know that they are insanely healthy for me, but sometimes a girl just wants a cheese stick. Know what I mean?
So, when I came across these “copper penny” carrots, I was instantly thrilled. For one, check out that creative name; copper pennies. What is better than a name like that for a vegetable dish? There are none.
These carrots are marinated in a savory sweet and sour sauce that really hits the spot. My entire family enjoyed these carrots and I believe that yours will too.
Believe it or not, this recipe for sweet and sour carrots is really easy to make. It uses pretty basic ingredients that you probably have in your kitchen right now. I know that I generally hate having to rush to the grocery store to find a missing ingredient for a recipe that I am making. How about you?

Quick Tip: I enjoy using fresh carrots straight from my garden as I think homegrown food is always better than store-bought.
