My son loves rice. I can get him to eat almost anything if I mix it into rice. Last summer, I was trying to find ways to increase his flavor preferences and I realized quinoa was a lot like rice in terms of texture and size.
I came up with this fun quinoa recipe including other things he loved, like beans, cilantro, and lime. It was a huge hit! I was surprised at how much he ate… without complaint! And to this mom, that was a huge win.
This recipe pairs nicely with tacos or quesadillas and includes just enough freshness to help you not feel weighed down while you fill up. I also enjoy scooping this southwestern quinoa salad up onto tortilla chips. Tostitos makes these chips called “Scoops” and they are perfect for this salad. They do just as their name suggests. Yummo!
