Twice a year, my co-workers and I arrange a potluck for anyone willing to show up with a dish. With more people attending every time, I was struggling to find a recipe that would stand out amidst so many offerings. I know, I know – it’s not a contest… But I have to admit there is a little bit of pressure, in a positive sense, when everyone is bringing the most delicious dishes.
I was having a hard time deciding what I should make when my mother recommended this simple coffee cake. After looking at the list of ingredients, I felt confident enough to give it a try and I was not disappointed. Instead of taking home leftovers, I was left with a plate full of crumbs – and so many requests for the recipe!
