My guy is a meat and potatoes guy, so for our “meatless Monday” I figured I’d give him half of his favorite. This potato and corn chowder was phenomenal! It smelled good, and tasted even better. I honestly don’t mind making soup in the summer, I don’t think it’s taboo especially when followed by a cool treat for dessert. The best thing about this was that “The Man” didn’t even complain about not having any meat! In fact, he even asked if I could make this again the next week.
Just make sure the potatoes are cut to bite size, I made the mistake of only quartering my red potatoes and they were a bit large to get on the spoon. The real butter and heavy cream stirred in at the end make the consistency just right, and the flavor is out of this world.
