Sometimes (quite often, in fact…) I have a craving, a sweet tooth for something and I just can’t put my finger on it. I want it to be sweet, salty, soft and satisfying. Peanut butter embodies all those characteristics, but for me eating a spoonful makes my mouth feel dry and sticky. Mix it with heavy cream and chill it, and like magic it becomes light and cool.
This pie was super easy to throw together, and embodied everything I thought it would. Resting in the graham cracker crust, the filling was just the right amount of sweet and nutty. I’m really glad the family was home for this because I don’t think I would’ve known where to stop. Let me just say this; there were no leftovers, none whatsoever!
