Stop the press! I had to make this the moment I saw it. The cool coconut filling, crunchy streusel topping, and wow – it’s making my mouth water all over again! Lightly sweet and fluffy with a tropical flavor makes for the perfect dessert – ever. Plus, who doesn’t love Pina Coladas? I am sure this dessert would be best served in a hammock.
I also never knew you could make a dessert crust out of granola bars! That’s exciting stuff for any seasoned baker. I couldn’t wait to try it out and it didn’t disappoint. While I love every part of a cake, when it comes to anything with a graham-cracker-type crust I want to eat it from bottom to top.
